Ian, the only way you can have the date change bang on midnight is by noting exactly when it does change, then have a watchmaker remove the hands at that time and re-install them at the 12:00 position.

Rolex date doesn’t change at midnight. Rolex designs its watches so that they change the date at midnight. But for a number of different reasons, they may change slightly before or slightly after. This is completely normal. I spoke to the rolex rep in selfridges & he confirmed that it could change anything up to 5 mins after stroke of midnight. Anything more than that & it's operating outside reasonable variance. Credit to the bremont though.
It's not advised that you try to change the date between 22:00 and 2:00 or you may damage your watch. - Calibre Zenith El Primero (COSC): changes instantly at 0:03 - Calubre Rolex 3135: changes instantly at 0:04 If your watch was always 5 minutes late in time keeping, it wouldn’t be very impressive despite the lack of electricity and mechanical nature. The date changing isn’t much different. Then again 4 minutes off of 24 hours (1440 minutes) is still 99.7% accurate to the day change in a 24-hour period; so maybe I’m being unreasonable. I have personally never heard of a QUARTZ watch breaking because of date change at certain time. Now, the manual does say that if one sets the date at these times, it MAY not change the next day, but not cause adverse issue long term.
